Nuevo Baztán

The town of Nuevo Baztán is in the southeast of the Community of Madrid, and was founded in the early eighteenth century by Juan de Goyeneche y Gastón as a centre for agriculture and the manufacturing of valued items such as glass and fabrics. It was declared a Historic-Artistic Monument in 1941 and an Asset of Cultural Interest in 2000.


The village was designed giving priority to outdoor spaces so that its inhabitants would get to know each other. A baroque stately home presides over an elegant centre with three squares, notably the Plaza de las Fiestas, also known as Plaza de Toros, which housed bullfights, plays and concerts in Goyeneche's day. It is bordered by the Casas de Oficios (public buildings often used for the court and guards) with its wonderful arched balconies.


The Goyeneche Palace is an impressive Historical-Artistic Site erected by José Benito de Churriguera, and shares a continuous façade with its adjoining Church, to form the central nucleus of this village so rich in historic monuments. Built with limestone and granite, it is characterised by its harmony, simplicity and austerity. It has two floors and at its far right stands a Herrerian-style tower topped by a stone balustrade and balls, in homage to Juan de Herrera and his El Escorial style.


Nuevo Baztán's cuisine is unequivocally Castilian, with roasts and lamb chops featuring widely. Sheep cheese and vegetables from the surrounding plains are also recommended. There are also some more particularly local specialties, such as repápalos, a pudding made with wine and cinnamon, similar to pestiños (honey fritters). Another typical sweet treat is puches, a kind of sweet porridge that was traditionally eaten on All Saints' night.


Beyond its history, Nuevo Baztán also has a lot to offer in terms of natural heritage. Walk the Senda de Valmores, a circular path designed to reveal man's influence on the landscape, as well as the evolution of the "human and natural environment" resulting from these actions, both in ancient and modern times. Indeed, the entire route is dotted with remains of factories, mills, warehouses and fulling mills for the manufacture of articles that were later finished in the factories of the Factory Complex.
